The morning started off well with a meeting. I am going to be teaching clinical for a nursing program this fall (starting next week) so it was a meet and greet with the students. I came home and made myself a good breakfast. Next was to meet with my trainer...good, right? Well apparently my body decided it was done by noon today because I was exhausted throughout the whole workout. Oh well.
I then attempted to force myself to be productive. Failure. At least I know myself well enough to give in to ''one of those days'' sometimes. So I thoroughly enjoyed allowing myself to lay on the couch for most of the afternoon and watched 2 discs of Six Feet Under (good show...on season 3 now).
I then drug (dragged?...not sure) myself to the store to get the rest of the ingredients for a ''one of those days'' dinner...which actually turned out quite well : ) The recipe originates from the Hungry Girl website. There are some great classic recipes with a healthier twist. If you haven't already, I would say check it out! (The fettuccine alfredo recipe is good, minus the tofu noodles (in my opinion) ) She also has a great cookbook for healthier cocktails and appetizers. There are some great things in there too : )
Bri's Extra Sloppy Joe's (adapted from the Hungry Girl recipe)
p.s. whenever I even think about sloppy joe's I can't help but recite Billy Madison in my mind..."I made 'em extra sloppy for ya''...yeah
Ingredients:
- 1lb lean ground beef, browned
- 1 3/4 cups of plain tomato sauce
- 2 tbsp tomato paste
- 1 tsp steak seasoning (or montreal chicken spice works too), sprinkled on beef
- 1 tbsp worchestershire sauce
- 1 tbsp red wine vinegar
- 1 tbsp olive oil
- 1/2 green pepper, chopped
- 1/2 yellow onion, chopped
- 2 tsp sugar or splenda
- hamburger buns (if desired)
- dash of salt to taste

2. In separate pan, brown beef and sprinkle seasoning

3. Once browned, combine beef with onions and peppers
4. Add remaining ingredients, stir, and warm on stove
5. Serve on buns if desired
6. Enjoy!

And then, if so desired...follow up with a fattening dessert. If you're in the market for one, I'd recommend the no-bake Oreo cookie dessert. It can be found in the baking aisle of most grocery stores and even Target. I managed to muster up the energy to make some of these today too. Priorities you know.
So now, I am enjoying the dessert shown above (not gluten free btw...obviously) and watching Tangled. I am such a girl.
On a whole separate note, my brother-in-law Chris left yesterday for his study abroad trip in Rome. It also happened to be his 21st birthday. Now that is a good day! All of Jason's brothers came over the other night so I shot a few pictures (in our poorly lit basement) since it will be awhile til we are all together again. Happy Birthday Christopher and have a most wonderful time in Italy...I am mega jealous!

Ok, I better wrap things up. It's the lantern part towards the end of Tangled...so pretty : ) Makes me think of Ellie, Lula, and Ruby...miss you girls!!! And last but not least those adorable nieces I speak of pointed out that Jason and Flynn from Tangled both do the ''smolder''...this is SO true. This clip is pretty much Jason to a T!
