Speedy Recipe

I made this a week ago or so. It's fast for another one of those nights where you don't have time or energy to cook from scratch. : ) It was one of those things I kind of made up so I was a little scared for the 'ol first bite but it was delicious and made great leftovers! Hope you enjoy : )

Bri's Chicken Pasta Primavera

Ingredients:
  • Box of pasta of your choice (rice, wheat, white...whatever you fancy), cooked
  • 2 jars of light Bertolli alfredo sauce (much less fat, good flavor!)
  • 1 clove of garlic, chopped
  • 1 tbsp olive oil
  • 1 yellow onion, chopped
  • 1 green pepper, chopped
  • 1/2 bag sundried tomatoes
  • 2-3 boneless chicken breasts, grilled
  • Italian seasoning of your choice
1. Start cooking noodles & chop up pepper and onion
2. Saute onions and peppers in olive oil
3. Sprinkle seasoning of choice on chicken breasts, grill as desired or pan fry (we use our George Foreman)
4. When onions and peppers are mostly cooked to desired softness, add sundried tomatoes and simmer for 2-3 minutes

5. Strain noodles when reached desired softness
6. Dump noodles and 2 cans of sauce in with the veggies, mix well
7. Let mixture warm, chop fully cooked chicken and add to mixture
8. Serve and enjoy!
